The months of May to July are absolutely wonderful – the weather is great, it is bright outside again, and there are so many awesome looking strawberries begging for something to be done with them. And what better way to use them than brunch?
Last weekend I had a few friends over for brunch. I walked into the grocery store that morning prepared to buy cereal (we were going to do a morning of all different types of cereal), but when I saw the strawberries I couldn’t resist. It was time to make some strawberry shortcake. A long time ago I learned from a friend’s mother that one of the best strawberry shortcake biscuits come from the Bisquick box. Don’t get me wrong, I’m sure there are some really awesome recipes to make them from scratch, but this is so mindless, doesn’t take very long, and they’re delicious. Oh, and you can get 15 good sized biscuits out of a portion (it says 6, I don’t know what size biscuits they’re talking about, but that’s just crazy). And the best part? One of the girls was gluten free and I found out that they make gluten free Bisquick!! They didn’t taste half bad either.
